How do I set up 11x17 paper size for doing a 8-pg booklet

Working in Publisher 2000, I want to print a 8-pg booklet printed landscape
on 11X17 paper printed duplex, folded, and stapled. How do I set it up on my
computer?

I do not see these options on my Publisher 2003. How would I set up the same
type of booklet on 2003?

File, Print Setup, select 11"x17" paper.

That's File > Page Setup > Printer and Paper in Publisher 2002 and 2003.
It's back to Print Setup in 2007 Publisher.
