How do I track a project based on quantity output.

I would like to track a projects progress, based on quantities of units
instead of resource time/hours.

Is this possible?

Consider using the Physical%Complete method of Earned Value.
You can read more about it in the help.

In setting things up this way, you can create some type of "Program Event",
"Significant Accomplishments" and "Accomplishment Criteria" for the units.

Example:
PE: Manufacture of 100 Units Complete
SA#1: All Power Supplies Complete
SA#2: All Housings Complete
SA#3: All RF Boards Complete
SA#4 All Digial Boards Complete

Then under each SA, you could have subordinate "Accomplihsment Criteria"
which is the next layer of detail.

So, as each PE becomes complete, you have completed 100 units. A contract
to manufacture 500 units could be broken into 5 PEs, etc.
