I use an exchange server for entourage and I can not seem to turn OFF the automatic send and receive. I have gone to Tools>Schedules and created an option titled Manual "When" is 'Manually' the "Action" is 'Receive Mail' from my exchange account but I still automatically receive my emails.

How can I turn OFF the auto receive function?

Entourage automatically connects to Exchange, and I do not believe that
there is a way to disable this behaviour, except for working offline
(Entourage>Work Offline) and going back online whenever you want to check
for any new e-mail messages.

As Michel Bintener said, the only way to avoid automatic send and receive in
an Exchange account seems to be to work offline. If you are using Exchange
ONLY for e-mail, then you may be able to connect via IMAP instead. That
would preclude your using the Exchange calendar and contacts, however.

If you are interested, ask your Exchange system administrator if the server
provides IMAP connectivity. The Community College where I work allows me to
connect either via Exchange or via IMAP.
