How to add more filters to a Mail Merge?

In the Mail Merge Helper Query Options Box I can only add
a total of 6 fields to filter on, how do I add more?

THere is no way using that box. You probably only have two options:
a. create a query or view in the data source or in MS Query (if that is
possible in your case)
b. using Word VBA, use the OpenDataSource statment or the QueryString
property of the MailMerge.DataSource object to issue the necessary SQL. That
should work for data sources such as Access, but I do not know if it will
work with data sources such as a Word table.

You'd have to edit the QueryString property (VBA) directly.
The tricky thing is, Word can't accept more than 255
characters for the SQL that performs the query...

What's your data source? And what version of Word/Office?

Can you describe the kind of filter/query you're trying to
set up in a bit more detail?
