Can someone kindly refresh my memory on how to center headings in a document
or how to center anything?

Erm. you might find that button on the toolbar second next to underline on
the right.

even for headers.

Not sure I understand this. The centre button is obvious - not sure how
anyone can miss it (I assume you're talking about Word...)
