how to delete on Exchange, but retain email locally

We are running Outlook 2007 connected to our corp Exchange Server across the
Internet
using the new RPC over HTTP connect - and that's great.

We used to use a normal POP3/SMTP based ISP mail service and "other" software.

Since we are new to Outlook, we would like to know exactly how to setup our
Outlook
so that messages will expire and be deleted from the Exchange Server,
but yet be retained on our local Outlook until we no longer want it and manually
delete it locally.

Is this possible ??
