How to show number of people working at given time (or period)

I would like to be able to show how many people I need on working on the
project at a given time (ie May 26) and over a given period of time (week of
May 23 or month of May). I bar chart would be ideal!

You might want to try "Analyzing timescale data in Excel" feature. You can
find this in the Analysis toolbar. The field you should select to output is
'work'.
