I can't get Word to save my settings. What do I do?

Our office has just converted from Word Perfect to Word. I tried to change
the default font on the envelopes but after one envelope prints, the settings
revert back to Arial. I have tried to change the header on documents and
though I can print them once, the changes don't save. On some of my documents
I can't get the header off the front page. Other documents I can't stop the
header from continuing on in the document. Mind you I have followed the
Microsoft Office Word 2003 directions to a "t" and still am having problems.
HELP!!!
