Can someone tell me how to do this? It appears the option is missing from my
version of PP XP. I want a line chart to come in one line at a time and I
want to have my bar chart come in one bar at a time.

You need to animate by series.

First add the animation to the entire chart.

Now select the animation in the Custom Animation taskpane and click the
downward pointing arrow next to the animation.

This will open a flyout menu. Choose "Effect Options".

In the Effect Options dialog box, choose the Chart Animation tab.

Choose Group Chart: By Series.

In addition to TAJ's explanation, know that the "group" / "animate by series
or category" options are dependent on a combination of the animation and the
chart type you have. In other words, some animations won't let you animate
individual series/category data points on some types of charts.

Choose something simple like a wipe animation to see what's generally
available.
