I want the arrow to show on the drop down box; however, I do not want to
protect the entire document, only the drop down box.

The best you can do is to insert a continuous section break before and
after the dropdown, and then protect only the section between the two
section breaks. You have to use the Tools > Protect Document menu
instead of the lock icon, select Forms protection, and click the
Sections button so you can uncheck the other sections.
