Import new template maintains old styles

When I have an existing document with an existing template
and styles, and I assign another template to use instead,
it maintains those styles in the old template for which
there is no equivalant in the new template.

Is there any way to import a new template so that the old
styles (that don't have an equivalant in the new template)
disappear? or so that you are prompted to assign them a
new style?

Or can you only manually go and delete the old styles you
no longer want and reassign that text to a style from the
new template?

First: you can use the organizer to manage styles -- delete some or all;
copy some or all from one template or document to another.

Second: you can use Find & Replace to substitute one style for another. On
the Find and Replace dialog, click More to display the format options. Leave
the Find What and Replace With boxes empty, but for each click Format >
Style and select.
