We are looking for a solution to collect data in the field using tablet pc,
smartphones or standard notebooks. Our forms are pretty straightforward. It
is my understanding that if I use infopath for this project that each user
would have to have a license of infopath and then we would host the form
template on a sharepoint server where the data would be stored. Is that
correct?

In answer to your question Yes you can host your InfoPath form template on
SharePoint using InfoPath Forms Services and have your devices access it
that is dependent however on each of the devices having an internet
connection to access the form that is being hosted over the web from your
SharePoint server, this approach also removes the need to have the InfoPath
client installed on each of the machines that are accessing the form.
Finally for this solution to work you wil need the Enterprise version of
MOSS (Microsoft Office SharePoint Server)

Thanks Ben - however we do not want to use the enterprise version - just
regular sharepoint without MOSS. In that case each user would have to have
the infopath client installed? Any ideas how much it costs per user? If
they have the client installed will the form that they fill out be able to be
saved on the sharepoint site? Just the data or the actual form? If data,
does it save it in a sql type format?

For pricing of the SP client your best to speak to your MS rep as there are
a lot of things that come into play.
if you do plan to go down that route then the data will still be saved to
SharePoint as a .xml file as per usual.
