how do i stop date and time updating in word document when reopening even
though the update automatically box is unchecked

The setting of the "Update automatically" box is relevant only at the time
the date is inserted (as text when the box is unchecked, as a DATE field
when it's checked). To solve the existing problem, press Alt+F9 to display
field codes, change DATE (or TIME) to CREATEDATE, Alt+F9 to toggle back, and
F9 to update.

You are using a DATE or TIME field rather than a CREATEDATE field. This
field should be put in the original template if possible.

In the document in question, press Alt-F9 to display field codes. Then
change the field to a CREATEDATE field, press F9 and then Alt-F9.
