Is there a way to cc: an E-mail directly to a file when you send the E-mail
instead of having to do it manually after the E-mail has been sent. I
remember be able to do this back in IBM PROFS

No. But, you might save a step if you choose File - Save As, and saving the
file to disk before clicking Send.
