Is there a way to launch an icon during presentation?

Is there a way to launch an icon (say Excel File) embedded on the Powerpoint
page during presentation mode ?

Sure can. Actually several ways of doing this. For example you could click
"Insert", "Object", click the "Create from file" check box and click
"Browse". When you find the file you want, click the "Display as icon"
checkbox, then click "OK". An icon will be placed on your slide and when
clicked in Slide Show mode will open the file.

Another option is to put any sort of image on your slide (button graphic,
etc.), right-click the object and click "Action Settings", click the
"Hyperlink to" dropdown and scroll down and select "Other file". Once you
have found and accepted the file, in Slide Show mode all you have to do is
click the object.
