Keeping only parts of Outlook 2000 open

Is there any way to, say, keep only the Task List open
instead of the full Outlook program?

Open Outlook
Expose the Folder List
Right click Tasks
Click "Open in New Window"
Close original Outlook window you opened.

Or, you can create a shortcut to the tasks folder by right-click dragging
the Tasks folder from the task list to the desktop or Windows Explorer, and
then choose "copy here."
