I am trying to find a way to create keypad shortcuts to easily type in
symbols in onenote for taking class notes. In word it is very simple to
create the shortcuts under Insert>Symbol>ShortKey. OneNote apparently
doesn't have this functionality, or I may be missing it. Any ideas?

In ON you can use autocorrect to insert symbols. For example, a lot of law
students use autocorrect to convert "ss" into §.

If you're on a normal keyboard instead of a laptop keyboard, you can also
use the Alt+4 digit number (as found in the Windows Character Map utility)
to insert frequently used symbols.

Things would be ways easier if one could do that leter when "ironing"
a text. But unfortunately we have not got a Search+Replace feature
(which I really cannot understand as this is one of the very basics in
each and any tool for editing).

You might use one of the Hotkey tools. I'm using "Phrase Express"
(freeware <!>)
http://www.phraseexpress.com/
and there are tons of similar and/or even more powerful programs.
