How do I lock a calendar appointment so that other user with access to the
same calendar cannot remove it/delete it?

You can't lock items, as far as I can tell. Remove their editor permissions
for the folder.

Sorry - that doesn't help as we are all using the public calendar - but I
wanted to prevent someone from 'accidently' deleting my booking of the
meeting room...

I don't have any other suggestions, then, because you can't protect individual
items.
