Managing a project in Outlook 2003 Small Business

Hi There
I am using Outlook Small Business Manager. We produce live events and videos. I am curious if anyone is using Outlook as a "light" project manager. No charts or anything like that. Just how are you grouping details of a project such as date, who is involved, location... and keeping it all together including tasks, documents etc..
