message importance setting

How do I change the importance setting for one message
only? It's very easy with express, but our office is no
longer using it. So far, all I can find is how to change
ALL of the messages to priority.

When you're editing the message click the Red Exclamation point or Blue Down
Arrow that's on the standard toolbar.
