Open the PST/Exchange account that has your items with categories
assigned to them (e.g. the PST with your contacts, email, etc). In the
folder list, right-click "Personal Folders", select Properties and
then
press "Upgrade to Color Categories".
It will go through all your items in your PST and extract the
categories
assigned to them and build a category list from that.

Is there a tool or easy way to move categories that were created in
Outlook 2003 to 2007
A colleague of mine hacked the registry to get them across - is there
an approved way. This is for clean installs, so not as an upgrade
