MS Doc Imaging- want to copy text from image, but in Japanese?

Hello, I am using Microsoft Office document imaging program to copy the
Japanese text from the image into a word document in order to translate to
English. HOWEVER, in the OCR dialog box- Japanese is not a default language
option. Therefore HOW do I either get the Japanese from the pic to translate
into English or have Japanese as a default language option??
