Newbie - customer service template

Hopefully some can help - I just downloaded the MS Customer Service
template; it looks like I have all I need there to get up & going.
However, I have a few questions. If I have 3 staff (Bill, Mary, Jane)
logging calls can I have the "open by" column automatically populated
with their individual staff name? How do I create a "front end" - e.g.
Bill, Mary & Jane have a button to open up call logging only, while I
have call logging and reports buttons?
