Do the Gantt chart continue to display work on weekends if the work starts
during the week let on a Thursday and has a duration of 5 days?

Hi

by default saturday & sunday are defined as non-working days in the standard
calendar, so if you're using this as your project calendar then a 5 day task
starting on a thursday will finish on the following wednesday. However, the
gantt chart display, by default, shows the task bar in front of the
weekends - making it appear that work is being done on those days - this can
be changed by choosing format /timescale, going to the non-working time tab
and choosing "in front of task bars".

Adding to Julie's answer ... the Gantt (and other) timescales will always
show all 7 days of the week, after all, they're a calendar. Julie told you
how you can have the Gantt chart bars displayed either as a continuous bar
or interrupted for the non-working days but there's is no way to completely
drop the non-working days from the timescale itself.
