How do I get my outlook to automatically respond with
an "out of the office" email?

The Out of Office Assistant should be available on the Tools menu if you are
connected to an Exchange server. If you're not on Exchange, you can spoof
the OOA using the Rules Wizard, but Outlook must be kept running in order
for the rule to work. Look here for more information:
