Outlook Categories

We have lost the categories for each of our contacts. The category field is
now blank.

is there any way to restore them? How did we do this?

Excellent question.
How did you do this? You're in a better position to answer that than we. You
were there. We weren't.
Give us some hints rather than making us try to guess all the possible ways
one could lose category designations. Outlook doesn't do this by itself.
Include your Outlook version and information store.
