Outlook Mail- User Defined Field- can't input

I have created a text field in a display in Outlook so that I can keep loads
of mails together, but easily add a note to say that I'm waiting for someone,
etc., but how do I input to that field from in the display? It doesn't come
up when I open the email (this is something I'm more used to doing on Tasks).

Also, when making a new field, what are field types Keywords and Combination?

Instead of a new field you might use the existing FlagRequest, which is
designed for exactly that.

If the view allows in cell editing then you can enter text directly in the
table view. That text is displayed on the top of the message if you open it.
You can also right click the item and flag it.

The type Keywords is for multi-value fields like Categories. Combination is
for combined properties, e.g. "[Subject] [Company]".

When creating a custom field, ensure it is of type Text. Do you have the
option "Allow in-cell editing" checked on in the view settings?
Also, when making a new field, what are field types Keywords and Combination?
