print layout page size appears small

why , when my page is A4, do I only see the 'writable' area (like an almost
square page) instead of the whole page with its header + footer?

Tools > Options > View tab
Under Print and Web options, check "White space between pages"

Or you can hover the mouse at th every top of the page image and when the
cursor changes, click.
