Project Reporting database

I am trying to combine several excel forms my company uses into one database.
I have a very basic understanding of access enough to make drop down menus
and that kind of thing. However everytime I talk to my boss he has another
dream for his database to do so I am kind of overwhelmed with the grand plan
for this. Any help i can get on a overall design would be great These are the
forms and their various fields:
