Sending Internet e-mail via SMTP when exchange server configured

Outlook 2000, exchange server is configured and working. Now I need to
send an e-mail via a separate SMTP server. How do I tell outlook to
send an e-mail "via" a separately configured SMTP server (and not
"via" the main exchange server?)
