After I create a canvass and graphics and I do a print preview, I get to see
{shape\ *mergeformat} instead of the canvas in the normal view. Yet, if I
choose the print layout, the canvas and the shapes are showing. Help

On the Print tab of Tools | Options, clear the check box for "Field codes."

The "Field codes" check box was not checked. I still have the same problem.

I misread this and thought you were seeing the field code in Print Preview.
I'm surprised you're seeing it in Normal view and not in Print Layout view.
Objects in the drawing layer are displayed in Print Layout view but not in
Normal view. If you see field codes in Normal view, you should be seeing
them in Print Layout view as well (but not in Print Preview). Alt+F9 (or
clearing the "Field codes" check box on the View tab of Tools | Options)
should take care of this.
