Sorting column

How can I sort and subtotal by the first letter in the
column. For example I have a excel sheet that I would
like to subtotal by the change in last. All Last names
starts with A, Last Names start with B, etc.

Why would you want to do that?

Try a helper column, where you use a formula that extracts the first letter
of the last name:

=LEFT(A1,1)

and do your subtotals based on that column.
