Specify which .pst file to use when using activesync

I have 2 pst data files - one is for my own use, and another is the family
shared calendar and contacts, which we access from several computers in the
house.

How do I tell ActiveSync to only point to the family calendar and contact
data file instead of the default pst file?

You can't - you must make the other .pst file the default.
