Table of Contents with heading other than default

I have two questions. First, I am using Word 2007 working with a document
originally created in Word 2002. I am trying to create a TOC using the
default headings. I see Heading 1 in the ribbon, but I can't find Heading 2.
Where do I find it?

My second question is how do I use one of the other headings, such as Title,
in the TOC?

By default, the Title style is formatted with a Level 1 outline level, so it
will be included automatically. You can include any style you like by
assigning it an outline level, either as part of the style definition or in
the TOC Options dialog.

For styles you don't see in the ribbon, open the Style window (dialog
launcher at the bottom right corner of the Styles group).
