When I launch Word it automatically comes up with a blank document. How do I change this template to automatically come up with our headed logo instead of a blank sheet?

The template that comes up automatically is called the Normal template. It
is inadvisable to change it the way you have in mind since it tends to
corrupt.

The right way to do what you want is to create a Document Template (a.k.a.
Custom Template) which you can access from the Project Gallery (in Word
2004, that is there are changes in 2008). So ...

Open a blank document, change it to the way you want it to look and then go
to File>Save As and from the Format box, choose Document Template (or Word
Template). Then when you want a new document based on this template, open
the Project Gallery from the File menu (or change your Word General
Preferences so it displays on startup), and click on My Templates to locate
your custom template (again, assuming you¹re in Word 2004).
