Troubleshooting Signature Font Colors

I've been trying to troubleshoot a problem with font colors in a
signature file in Outlook 2003, off of an Exchange 2003 server, and
using Word 2003 as the editor. The signature starts in black, has some
text in blue (the person's title) and reverts back to black. When using
Outlook as the e-mail editor instead of Word, it works fine. It appears
correctly when attempting to edit it (and my boss deleted and recreated
it manually) in Outlook AND in Word, but when a new message is created,
the entire signature will only appear in black. It IS set to compose in
HTML, it IS set to use Word as the editor. I've tried adjusting options
in Outlook and in Word under the "Email Options" button. There is NO
stationery set either. I'm at quite a loss for figuring this one out.
Does anyone have any further suggestions (does this work in Office '07
and should I become an early adopter? :)
