Using different identities when sending out an email

In Outlook Express, I was able to choose the 'From' field when sending out new emails. I could choose one of several email accounts to be indicated as the 'from' identity. In Outlook 2000, when I send a mail message, I don't even see a 'From' option in the outgoing message. Just Cc, Bcc, or Subject headings.

I would like to be able to state which of my email accounts the particular message will be 'From' when sending out a given email. Does anyone know how I can accomplish this? This seems like it should be a basic function in Outlook, but I can't find it like I used with Express.

Any help would be greatly appreciated!
