Visits = total number of individual visitors (unique IP addresses) that visited your site
Hits = total number of items a browser has requested from your site (pages, images, etc.)
Example:
I open the your home page of your site, which has 5 images on it.
This would count as 1 visit and 6 hits (1 for the page, 5 for the images)

So what is the difference between hits / and total hits ? (the way to
calculate it )
( i have some stats for example with 10 hits one day and a total hits of
50 , the day before the total is higher, so that's probably not )
I have a subsite with, some days 0 visits and, for ex 10 hits. How can it
be possible ?
Total hit should be the total for all hit in a given time period.
What stat application is your web host using, does it have a help section that explains the stats?

You might try the sharepoint designer newsgroup, or wss group.
