I am using the latest version of Office for WindowsXP. When I click on the
Email icon (file send as attachment), it automatically opens up MS Outlook. I
want it to automatically open up Mozilla Thunderbird. How do I set this up?

Ensure that Thunderbird is set as your email client of choice in Internet Options->Programs. However, I don't believe that Thunderbird is a simple or full mapi client - I could be mistaken.
