auto save emails to contact ???? in Office 2003

I've noticed that some e-mails in outlook will auto save
to a matching contact in the contacts activities. Not all
emails from people in my contacts list get saved. How can
I set-up a paticular e-mail recipient to auto save into
that contacts activities tab????TIA
