I'm training myself here from the ground up so forgive the simple question.
Just have to make sure I'm understanding this correctly. Could someone
please explain the difference between a task and a project type in an
enterprise custom field? I've made several task fields successfully and seen
how they report task by task. I don't understand where the project field
shows up (and ultimately, if this is related to how fields are reported in
PWA although I know this isn't a PWA board!)

The Project fields are Project-level information reporting, like "Who owns
this project". Tyically, in an enterprise installation, you might have a few
high-level fields like this that help in rolling-up reporting information by
"Ownership" of various projects. Task fields are for reporting on
task-specific information, and is the type of information that likely gets
captured and reported upon using PWA.
Project-level fields show up in the Project Center view in PWA so you can
spot meta-data about high level project information, like I mentioned above.
