Go to Tools | AutoCorrect Options. Uncheck the box for Capitalize first
letter of sentences.

When you press Enter to start a new line, you create a new paragraph. Word
assumes that a new paragraph will begin with a new sentence, and by default
AutoCorrect automatically capitalizes the first letter of a sentence. You
can disable this action in Tools | AutoCorrect, but it would be better to
learn not to press Enter at the end of every line and instead to let Word
wrap the line naturally.
