change the display name for Outlook Today - [Then your name here]

Hi, i have a user who has inherited an account, and wants to change the
display name in outlook today to represent their name, ie where is says
'Outlook Today - [Then your name here]' ,

things to note user is running citrix and can be logged on to any one of 3
citrix servers

I don't have access to the users password, thus i can't log on as them either
