CONVERT bmp FILE TO TEXT EDITABLE FORMAT?

I scanned a file and saved it with a bmp format but found I could not edit
the text and I need to edit it. Can I copy it to paint and edit the text? Or
can I just crop a small portion and paste it into paint and edit it, then
paste it back? Is that permissable if i can do it?Is there a better way to
edit the text? Can the file be converted to a text editable format? It is a
recipe file and the sugar needs to be removed and ice cream changed to
sugarless low fat yogurt. I am using Word froim Office 3 student edition. The
text was scanned with an epson CX310 all in one. I found Paint could not edit
the text with out cutting and filling the area then putting corrected text
there which was very hard to do and did not match the picture very well. But
I made it look acceptable. it took much too long. is there a better way?

You must use OCR scanning (text scanning), and I've never used it, but I
understand the one that comes with Office 2003 sucks.
