creating a "template" for completing forms

Hi,

I'm not sure what this is called but I have seen it done and would like to
do it myself.

I would like to create a "template". In my example I have a sales quotation
form that I have created using a number of text boxes.

What I would like to be able to do is to have the user editable sections
appear as a grey "square" in which the user clicks and enters their text.

The rest of the document is "locked" aside form these parts.

I have seen something similar done before and would be very grateful if
someone could point me in the right direction - even if its just a topic in
help.
