Creating new P&ID master symbols

I would like to create a new master P&ID valve symbol and add it to the
Valves and Fittings stencil. I want to duplicate the tags and properties of
exisisting valves so that it functions like the other valves in the stencil
(auto-numbers, same data fields, etc.). Is there a way to copy all the
information (not just the shape properties) from one valve and apply it to
the new one?

Use the Shape Conversion command from the Process Engineering menu to do
this. Here are the steps:

1) Drag an existing valve onto the page so that there is at least one valve
in the document.
2) If your custom shape is not already a master, select your shape on the
page.
3) Choose Process Engineering > Shape Conversion from the menu.
4) If your shape is on the page, set the Source to selected shapes. If it
is a master, select Shapes in a stencil and use Choose Shapes to select it.
5) Set the Category and Tag Format to Valve. Then click OK.

This converts your shape into a Valve that Visio recognizes. If you also
want your shape to have the same Custom Properties as other valves, do this:

6) Choose Tools > Custom Property Sets from the menu.
7) Put a check next to the Valve custom property set.
8) Select your shape in the drawing or in the stencil and choose the
appropriate option in the Custom Property Sets window.
9) Click Apply to copy over the custom properties.

That worked great. Thanks.
However, my new valve is still missing one Custom Property found in the
other valves. That property is "Valve Type". Do I need to add this manually?
(why wasn't it copied along with the others).

That property is probably not part of the Valve custom property set.
Usually this property exists on "multi-shapes" - shapes that allow you to
change the appearance of the symbol by choosing a different property
setting. Thus the property may not be applicable to your shape.
