Custom Highlight Colors

Is there a way to create custom highlight colors. It
suggests using light colors but most of the predefined
colors are somewhat dark.

No. You can use Format | Borders and Shading to apply shading to selected
text; in Word 2000 and above, this will give you a larger color selection.
