Customizing column to add company name

How do I customize a column to add a company name?
I want to add a column that will signify which company is responsible for
the task, or the updates. Later I will be assigning resources so I don't
want to use that.

What else can I do? And will I be able to filter/sort later using this column?

Insert, Column, Select Text1, OK
And yes, Filtering and sorting is possible.

I often use the "Contact" column for this. If you don't want to do that then
one of the text columns would be a good idea.
