Can I show the time of day along with the date on some tasks and only the
date on the rest? If so, how?

Nope, sorry. They all show the same format. You'll eiter have the time
on all or none.

Sure - it will take a little work, but you could enter the required
info - date only or date + time - in an unused text field (like Text1)
and then set the Gantt bar style to display Text1 next to the Gantt
symbol.
