default email formating by individual contact

Hello,

I am using outlook 2003. There used to be a way to so select email type
(text vs. html) by contact. I know the flag is set for some because when I
hit reply, some contacts get a text reply while others get the full bore
html.

How can a set this by contact? Thanks...Chris C.
